About this program
The Culinary Arts diploma program provides students with the opportunity to learn hands-on in a working food service environment. The core program is designed to educate individuals seeking career opportunities in hotels, restaurants, clubs and institutional food service facilities. Students will hone and apply their craft in team-oriented settings by preparing a variety of classic, modern and global menu items. In addition, special events will provide students with experience in planning and executing themed catered functions for large groups. Areas of study include baking and pastry, hot food preparation, butchery, cold kitchen/pantry, a la carte, safety and sanitation, culinary nutrition, kitchen math and measurements, knife skills, operating commercial equipment, food ingredient identification and product evaluation.
Program outcomes
  1. Demonstrate food safety and sanitation standards in accordance with Food and Drug Administration (FDA) Food Code.
  2. Apply knowledge and demonstrate fundamental cooking techniques and skills commonly found in the professional food service industry.
  3. Identify a variety of food products, evaluate taste profiles and utilize standard culinary terminology.
  4. Utilize kitchen measurements to calculate recipe conversions, yields, portion sizes and food cost.
  5. Discuss grading and quality standards as they pertain to meats, poultry, fish/seafood, dairy and produce items.
  6. Implement grading and quality standards in the preparation of meats, poultry, fish/seafood, dairy and produce.
  7. Demonstrate competent culinary skills in the professional kitchen.
  8. Apply effective communication, teamwork and customer service skills in a professional kitchen.
